After harvesting, the beans are fermented and dried on the plantation before being sold, and this process also has a significant effect on the final flavour. Some beans are prized for their subtlety and complexity, and others for their body and robustness. Manufacturers blend different combinations of beans before roasting, to produce the uniform taste that we are all familiar with.
