    Chocolate Trivia:
    The Latin name for the cacao tree, is "Theobroma", which literally means "Food of the Gods", reflecting the beliefs of the Aztecs who first used chocolate.

    Although chocolate contains minute amounts of mood-altering chemicals, you would have to eat about 12 Kg (25 LB) to get "high". Although people often get a craving for chocolate, it is not chemically addictive (the body never becomes dependent on it).

    Truffles are so-called because they resemble the shape of the expensive fungi of the same name. They usually have a center made with high cocoa chocolate and cream (known as "ganache") which gives them a very smooth, melt in the mouth, texture.

    The quality of finished chocolate doesn't just depend on the ingredients. To get the glossy or satin finish you see on good quality chocolates, and a good "snap" in bars of chocolate, the temperature has to be carefully controlled in a process known as "tempering" and, once it is poured, the melted chocolate must be cooled quickly or the different fats in the chocolate will start to separate out.
