Chocolate cake was first invented in Austria in the late 18th Century - Austria and Germany are still famous for chocolate pastries and desserts today. The Sachertorte, created in 1832 by Franz Sacher, is an Austrian classic with layers of chocolate cake and apricot jam, enrobed in chocolate glaze. And most of us are familiar with the Black Forest gateaux, which comes from Swabia in Germany's Black Forest region.

The cacao tree has only 20 genes, which limits the number of hybrids possible. However, because cacao is strongly influenced by its environment, there are an almost limitless variety of nuances in the flavour of cacao beans, often with significant differences between plantations in the same region.
