Chocolate Trivia...
Cocoa powder is made by squeezing the cocoa butter out of the beans after they have been roasted and ground. This is done with a hydraulic press that can apply a pressure of more than 6,000 psi (car tyres contain about 25-30 psi of air pressure!). The result is a dry paste which is ground again and sifted to make a powder. Cocoa powder is used to make the familiar drink, and also for flavouring desserts and other food products.

Because cocoa can be quite bitter, it is sometimes treated with an alkaline solution (known as "Dutching") to reduce the amount of acid. This gives a mellower flavour and also makes it easier to dissolve when making a hot chocolate drink.
