Chocolate Trivia...
Here is some of the jargon you may hear when people are talking about chocolate:

    Cacao Beans - The seeds that grow inside a cacao pod. The words cacao and cocoa are often used interchangeably.

    Nibs - The inner part of the cacao bean, after it has been shelled, which is used to make chocolate.

    Cocoa Mass - the mixture of solids and cocoa butter after the nibs have been ground. This may also be referred to as chocolate liquor.

    Cocoa Solids - the substance left after the cocoa butter has been pressed out of the cocoa mass. This is essentially the same as cocoa powder.

    Cocoa Butter - the fat content of the cocoa mass. Cocoa butter is a solid at room temperature, but melts at body temperature, so it gives chocolate that "melt in the mouth" feel.

    Cocoa Content - the total amount of cocoa solids and cocoa butter contained in chocolate, expressed as a percentage. The ratio of solids to butter in chocolate is varied to control flavour and texture and other ingredients such as milk powder (for milk chocolate) are also added.
