Chocolate Trivia Handmade, filled chocolates are made by first pouring molten chocolate into a mould, leaving it to cool for around 30-60 seconds and then turning the mould upside down to drain out most of the chocolate again. This leaves behind a hollow shell - the time the chocolate was allowed to cool determining the thickness of the shell. Excess chocolate is scraped off and the mould is then put aside, usually in a fridge set to around 10 deg. C, until the chocolate is fully hardened.
The shells are then filled, using a piping bag, to within a few mm of the top. Most fillings need to be piped while warm to make them flow, so the chocolates are then put aside to cool again.
Finally, more melted chocolate is poured over the mould, sealing the filling inside, and any excess chocolate removed with a large flat scraper, creating a flat base for the chocolate. The chocolates are then put back in the fridge to cool completely, usually for around an hour. They are then removed by turning the mould upside down and tapping it sharply on a hard surface.
